Honey Roasted Sweet Potatoes

4 medium sweet potatoes, peeled and cubed

3 Tbsp. Cox Honeyland's Wildflower Honey

2 Tbsp. olive oil

1 tsp. ground cinnamon
- 1/2 tsp. salt
Preheat oven to 400°F. In a large bowl, combine sweet potatoes, honey, olive oil, cinnamon, and salt. Toss to coat evenly. Spread sweet potatoes on a baking sheet lined with parchment paper. Roast for 25–30 minutes, stirring halfway through, until tender and caramelized. Serve warm.
