Citrus Honey Kale Salad
Salad:

4 c. kale, chopped and stems removed

1 c. mandarin orange slices (fresh or canned, drained)

1/2 c. sliced almonds, toasted

1/4 c. dried cranberries
- 1/4 c. goat cheese, crumbled
Dressing:

2 Tbsp. Cox Honeyland's Orange Honey

2 Tbsp. fresh lemon juice
-
1 Tbsp. fresh orange juice

2 Tbsp. olive oil

1/2 tsp. Dijon mustard
- Salt and pepper to taste
In a large bowl, massage kale with a drizzle of olive oil for 1–2 minutes until slightly softened. Add orange slices, almonds, cranberries, and goat cheese. In a small bowl, whisk together honey, lemon juice, orange juice, olive oil, Dijon mustard, salt, and pepper. Drizzle dressing over the salad and toss to coat evenly. Serve immediately.
