Honey Raspberry Jelly

4 c. fresh raspberries

1/2 c. Cox Honeyland's Raspberry Honey

1/4 c. water
- 2 Tbsp. lemon juice
In a large saucepan, combine raspberries, honey, water, and lemon juice. Cook over medium heat, stirring often, until the raspberries release their juices (about 10 minutes). Strain through a fine mesh sieve to remove seeds. Return the liquid to the pan and simmer until it thickens (about 15–20 minutes). Pour into sterilized jars and cool. Refrigerate for up to 3 weeks.
